Dinner time / Bacon-Broccoli Quiche

Good morning!

Or I guess it is day time already. I have had a slow morning today. I ate breakfast and then stretched a little bit. Now I'm just checking my e-mails and reading the daily news online. Soon I need to go take a little walk with Jinx because my back is still hurting.
But before I do that, I want to share a good recipe I tried yesterday. I got tired of always eating the same things and I wanted to make something I haven't made before. So, I found this delicious recipe for Bacon and Broccoli Quiche from one of my cook books. It turned out pretty good!

Bacon-Broccoli Quiche
-1 pie crust (I used store bought pie crust / piirakkapohja)
-6 eggs
-1 cup milk (2,5 dl)
-1 cup chopped broccoli (2,5 dl)
-1 cup shredded Gouda or cheddar cheese (2,5 dl)
-6 strips cooked and crumbled bacon
-1/4 tsp nutmeg
-salt and pepper

Roll the crust out in a pie pan. Spread the broccoli evenly on the bottom. Sprinkle with bacon and cheese. I also added a little bit of yellow bell pepper.

Beat the eggs, then stir in milk, nutmeg, salt and pepper. Pour over top of broccoli and cheese. I sprinkled some cheese on the top too. I didn't have gouda or cheddar, so I just used mozzarella.

Bake in preheated oven at 350F / 175C degrees for 20 minutes or until firm and golden.

Very yummy! And since we didn't eat the whole quiche yesterday, we will have the leftovers for lunch today. Have a happy Thursday everyone!!
