Hello again!
Holy crap it is cold in Finland right now! Our thermometer was at -26C / -15F this morning. Guess who biked to work though? Me!
I thought it would be tough but it wasn't too bad. I had my snow pants over my regular clothes and I wore my down coat. Then I had my red silk scarf wrapped around my neck so that I could pull it over my face if I couldn't breath the cold air. But it wasn't bad at all! My bike gears had frozen on the first gear, so I couldn't go fast but that was okay because then I wasn't breathing too hard.
But I was laughing in my mind at the idea of me biking at 6.30am in this crazy cold temperature, I must be nuts. But I'm not nuts, I'm just lazy... I didn't feel like walking in that temperature. Of course the buses are running just normal but I rather save my money for new clothes than pay for the ridiculous bus fares. Well, I guess that makes me nuts. Ha ha ha!
Anyway, my post was supposed to be about healthy lunch. Here's what I have for lunch today...
Turkey-Salami-Spinach sandwiches with Cheese
On whole rye bread of course.
I have sliced Mineola Mandarins with Avocado with the sandwiches
This great lunch will keep me going all day today. I highly recommend this to you too!
There are many reasons why this is a good lunch:
-I will get a ton of fiber from rye bread and avocado
-spinach and mandarins are packed with very good vitamins and minerals
-cheese will provide me with calcium + I will drink milk with the lunch
-turkey is full of protein
-I will get good fats from avocado
-salami is really just for the salty taste, it is not so healthy but I made sure I picked the salami that has the least amount of e-codes and no msg

Ur lunch looks so good. In fact just as good as my evening snack which contains all the possible fruits one can think of. :)
