DinnerTime / Roasted Zucchini

Happy late Wednesday night!

Guess what I got my hands on the other day? I'll give you a hint. It is green, long and delicious. It is zucchini!
My friend grows all sorts of things and her garden was producing more zucchini that she could eat. That is why she asked me couple days ago if I would like to have some of the zucchini. Of course I wanted some. I love fruit and veggies! By the way, did you know that zucchini is actually a fruit even though it is often treated as a vegetable.

I have never really cooked zucchini before, so I had to google ideas what to do with it. While I was looking for recipes, I also found out that zucchini is actually really good fo you. Here's what I learned about Zucchini:
-Low in calories, only 36 calories in one cup (2,5dl)
-Has a lot of fiber
-It lowers cholesterol
-Has a lot of vitamin C and A
-It prevents colon and other cancers
-It is high in magnesium and potassium and that helps to lower blood pressure as well as reduce the risk of heart attack and stroke
-Is also high in manganese and that helps to metabolize protein and carbohydates. Manganese also creates proline which is an amino acid that allows collagen to form, thus it works for our skin to stay firm and young as well as allows wounds to heal properly
-is good for prostate health

You can prepare zucchini in many ways from roasting to making soup or even bread. I decided to start easy and opted to roast mine in the oven. I washed and cut the zucchini in thick slices. I also cut up some onion to go with it. After that I put both the zucchini and onion on a baking pan with sprinkle of extra virgin olive oil as well as salt and pepper. I roasted the slices for about 45 minutes in 400F / 200C degrees. In the middle of the cooking I flipped the slices to make sure that both sides roasted and got this pretty golden color. I served my roasted zucchini as a side dish to a macaroni and beef casserole. Yummy!!

Cut up thick slices.


Cut a half an onion in the mix too. Sprinkle with olive oil, salt and pepper.


Yummy veggies are ready to go in the hot oven.

In the middle of the roast, flip the slices over.

The veggies are done when they have this pretty golden color.

Deliciously sweet zucchini and onion! Yummy and healthy side dish.
