CooCoo For Coleslaw

Hi there!

Before I'm off to my winter sports retreat, I want to share a yummy&healthy recipe with you. For couple weeks now I have been craving cabbage like crazy. I'm not sure why, maybe my body is in the need of certain nutrients. I kinda believe that when you crave something it is a sign that you really need it. But I think this only works with healthy food and not with sweets (*giggle*).

Anyways... To satisfy my cabbage carving I decided to make coleslaw. I had never made it before but I figured it should be fairly easy (*and it was*). My coleslaw turned out great! And since I made a big bowl of it, I even brought some for my friends at work.

I only used white and red cabbage along with carrots. I didn't feel like adding onions to it even though the recipe called for it. Next time I was thinking to add a little bit of strong mustard. It might taste good. Oh, and I used honey vinegar for extra sweetness.


Here's the recipe for you too:
- 6 cups thinly sliced cabbage (14 dl)
- 2-3 shredded carrots 
- 1-2 green onions chopped 
- 1/2 cup mayo (1,2 dl. You can skip mayo if you are afraid of calories)
- 1 tbsp vinegar 
- 1-2 tsp sugar 
- salt to taste

Cut and shred vegetables and put them in a big bowl. Mix mayo, vinegar, sugar and salt in another bowl. Combine mayo-mix with vegetables. Let the slaw rest in a refrigerator for 2-24hrs. Yummy!



P.S. Did you that cabbage is very low in saturated fat and cholesterol. It is also a good source of Thiamin, Calcium, Iron, Magnesium, Phosphorus and Potassium, and a very good source of Dietary Fiber, Vitamin C, Vitamin K, Vitamin B6, Folate and Manganese. Stay healthy folks!
