Zucchini Tuesday

Hello!!

Check out this yummy stuff I made: zucchini lasagna! My coworker brought me a huge zucchini from her garden and told me that it would make awesome lasagna. I had to try it of course.

You basically just replace lasagna noodles with thinly sliced zucchini, and layer them with beef-tomato sauce and cheese (*like you normally make lasagna*).

You can use a little less of tomato sauce because zucchini has a lot of water in it and it will make your lasagna super moist.

This lasagna is healthy because it has lower carbs, and zucchini is filled with tons of vitamins and minerals. Also zucchini is gluten free, so people with celiac disease can eat it too. How awesome is that?



Besides cooking I have been hanging out with Jinx.

We went for an hour long walk in the woods today. I thought it might rain since the sky looked dark but it didn't (*yey*).

The forest looked so cool with big ferns growing everywhere. They were as tall as Jinx.








After the walk I stretched really good because my muscles felt stiff. Now I'm about to eat ice cream and watch something absolutely brainless stuff on TV (*sometimes you just gotta do that*). I'm also trying to figure out what to wear tomorrow since it is supposed to be pretty warm yet rainy, which means sticky and humid...
