SnackTime / Clementine Jelly

Happy Sunday!

Another weekend has wooshed by me once again. Temperature has finally dropped to digits what is should normally be by this time of the year. I don't like the cold but it has its benefits too. I get to stay inside and either do fun indoor projects or do absolutely nothing. 

Both mornings, today and yesterday, I lounged around on the couch under a warm blanket for a really long time. It is freezing in our apartment since our landlord hasn't adjusted the heating yet. It was really warm so long that we didn't need a lot of heating but now we do. 18 Celsius is only about 64 Fahrenheit, and that is the temp in our living room right now (*yikes*). Not nearly warm enough for Riittalicious.

After getting bored of just laying on the couch and watching TV, I got around doing fun stuff as well as some chores. Today hasn't been as exciting as yesterday, I have been mainly doing laundry and tidying up the place. I also have a big pot of chili simmering on the stove (*almost dinner time*). Yesterday was the more fun day, I ended up making super yummy homemade jelly for our movie night with friends.

Since clementines are in the season around January, my local store had a killer deal on them. As soon as I saw them, I thought of Jamie Oliver's clementine jelly recipe that was on TV around Christmas time. I bought few kilos clementines and started juicing them as soon as I got home. It was so much fun to make this jelly! This would be a great project to do with kids too. 

Simple ingredients.

Basically you just squeeze about 20-30 clementines to get a little less than a quart/liter of juice. Then you heat up the juice with little sugar if needed. My clementines were super sweet, so I only put 3 teaspoons of sugar. Add gelatine pieces and mix well. After that you just need to divide the juice in serving dishes and put them in a fridge to set. Gelatine will work its magic in about 3 hours.

I used small drinking glasses as my jello serving dishes. I put pieces of fresh clementine on bottom of each glass.

While my jelly was setting, I also baked my own delicious bread. I had made the dough previous night, so I really didn't need to do much to make it. I used this awesome no-knead bread recipe that I have made a post about before. Read it here. I swear this is the most easiest bread recipe ever. You can't fail! This time I used whole wheat flour and oh my gosh - it tasted heavenly.

The only thing you need to top of this bread, is a quality butter. Yummy!!

About three hours later I was curious to see if my jelly had set. I had never made jelly from a scratch, so this was exciting for me. As you can see I had succeeded. Homemade super healthy jelly with no additives. How awesome is that?

Besides making good treats for our family and friends, I had also forgotten all about the crappy&cold weather outside. Mission accomplished.

To wow my friends even more, I topped off my clementine jelly with plain yogurt that I had a little bit of vanilla mixed in. I also shaved feather thin curls of dark chocolate to garnish the jelly. Super easy yet very chic looking dish to serve. 

Healthy&yummy snack or dessert. Two thumbs up!

Needless to say my friends liked this movie night treat. I think Jamie Oliver would be proud of me too (*wink*). I will need to make this jelly again sometime soon.

Anyway, it is about that time that I get to eat a big bowl of hot chili and watch some TV. We also have a big pile of laundry to fold. The joys of Sunday nights (*sigh*).
