Fish soup! And there is so much of it that it would feed a small army. But it turned out to be very delicious, so we will eat it in couple days. Soups are easy, cheap and healthy dinner options. And no need to worry about what we will eat tomorrow night, we'll just heat up the fish soup. And usually soups taste even better the next day.
I haven't made fish soup before but I have seen my dad make it many, many times, so I just kinda threw it together. Funny thing is, I used to hate it when dad made soups for dinner when I was a kid. It felt like they lasted forever and I was jealous of other kids with pizza and tacos. But I see the point now. Thanks dad!
So, this is what I used:
- pike that my hubby caught
- potatoes
- cauliflower
- water
- milk (fattier the better)
- butter
- salt
- pepper
- dried onion powder
- fresh dill
I just boiled the potatoes first for a while. Then I threw in the cauliflower. I let them boil gently till almost done. I drained most of the water and then added milk, butter (just a tablespoon), salt, pepper, onion and the pike. Since I cooked the pike last night, I had it all in little pieces without the fishbones. I put the fish in last, since they didn't need much cooking. After that I just let it simmer for a while till the potatoes were done. I added the dill and checked the taste to see if it needed more salt or pepper. Bon appetit!
It was pretty much as good as this soup our local restaurant makes. Hooray! Next time I will learn how to make it so that I won't cook the fish first.
