DinnerTime / Fish And Chips With Salad

Hi there again!

I told you earlier today that I have a dinner idea to share with you guys. The reason why I like sharing dinner ideas is because I am happy when people give me ideas for different meals. Sometimes I feel like I'm always making the same things over and over, so getting other people's ideas for dinner are welcome. That's why I'm posting this to my blog. Maybe I am able to help someone else to decide what's for dinner tonight!

Last night I was hungry and tired after I came home from my weekly HotPilates class. Since we had no dinner ready, I was trying to think of something quick to make. Here's what I thought of... Fish and chips with a crispy salad.

For the salad I used two different kind of lettuces, one really deep colored called red salanova and other just ice berg lettuce. Then I chopped up an apple, clementine and red bell pepper. For dressing I used juice from half a lime and drizzle of organic extra virgin olive oil. Yummy!
After the salad was ready, I popped some fries in the oven. While the fries were cooking I made a simple batter for the fish fillets; I mixed salt and lemon-pepper with whole wheat bread crumbs. First I dipped the fish fillets in whisked egg and then I dipped them in the breadcrumbs.
Instead of deep frying the fillets I cooked them on a pan. For the fish I used frozen pollock that I bought from the store.
I ate my fish and chips with ketchup and mayo.



This might not be the healthiest meal but I tried my best to make it better. Since I used whole wheat bread crumbs, I got more fiber than from regular bread crumbs. Cooking the fish on a pan with a little bit of real butter is also better than deep frying it. Plus I had more salad that the fries. That way I got my vitamins, minerals and fiber from the veggies and fruit yet I got the taste of fries that I knew I wanted. Not bad for a quick meal made in 35 minutes (+ thawing time for the fish).
