I made up a great green salad recipe last night from a scratch. It is so good even if I say it so myself (*laugh*).
It is made out of delicious fresh products that are in season right now, and since there is no heavy salad dressing it is low fat. Chicken gives it a hefty portion of protein, so all in all it is really healthy. If you want to make it too, here's what I used exactly:
-new potatoes boiled tender and then blanched
-asparagus blanched
-lettuce (any kind)
-arugula
-pea sprouts
-capers
-soft cheese like mozzarella or goat cheese
-olive oil
-black pepper
-grilled chicken breast
I just mixed all the ingredients together and served immediately. Yummy!
