Couple nights ago I happened to have a big&juicy apple left sitting on the counter alone, as well as some left over pecans from Christmas. I started to think what I could make with them, and eventually I came up with my own recipe for these delicious dinner rolls.
Riittalicious Apple-Pecan Rolls:
-1 cup warm water (2,5dl)
-1 bag of dry yeast (11g)
-1 tbsp sugar
-½-1 tsp salt
-dash of cinnamon if you like
-1 big apple grated
-1/4 cup pecans crushed (0,5 dl)
- ½ cup of rolled oats (appx 1dl)
-2-3 cups of flour (5-6dl)
-2 tbsp vegetable oil
Combine water, yeast, sugar and salt. Mix well with a wooden spoon.
Add oats and part of the flour, mix well. Add grated apple, pecans and oil, mix well. Add rest of the flour and knead until soft and elastic (*I used half whole wheat / half regular flour, it made the texture of the rolls more rustic, plus added healthy fiber in my diet*).
Cover and let rise until doubled.
Punch dough down; turn onto a lightly floured surface. Divide in half; shape each portion into 6 balls. Place rolls on a baking sheet. Cover and let rise until doubled.
Lightly brush with melted butter or olive oil before baking if desired (*I brushed mine with olive oil*). Bake at 375F / 190C for 20-25 minutes or until golden brown.
Delicious soft apple bits inside the roll.
Nothing's yummier than hot rolls with butter.
Hot fresh rolls, come and get them!
Happy Baking!
