Bake My Day / Peppermint Meringues And Cinnamon Almonds

Hi there!

Only one more night till Christmas. How exciting is that?! If you have some time today or over the holidays make sure to make these yummy snacks. You'll need very little ingredients and barely any effort. Two of these are also gluten free. These are great to give out as presents if you can stop yourself from eating them all as you bake them (*giggle*).

First recipe is for awesome Peppermint meringues. These little drops of heaven are light as air and have a hint of peppermint. To make these you will need:

-2 egg whites
-1/8 tsp salt
-1/8 tsp cream of tartar (*hirvensarvisuola in Finnish, local pharmacies sell this if you ask them*)
-1/2 cup white sugar
-2 peppermint candy canes, crushed

Preheat oven to 225 degrees F (110 degrees C). Line cookie sheets with foil (*I used parchment paper*).

In a large glass or metal mixing bowl, beat egg whites, salt, and cream of tartar to soft peaks. Gradually add sugar, continuing to beat until whites form stiff peaks.

Drop by spoonfuls 1 inch apart on the prepared cookie sheets (*I used a piping bag to make little hearts and circles*). Sprinkle crushed peppermint candy over the cookies.

Bake for 1 1/2 hours in preheated oven (*smaller shapes need less time*). Meringues should be completely dry on the inside. Do not allow them to brown. Turn off oven. Keep oven door ajar, and let meringues sit in the oven until completely cool. Loosen from foil with metal spatula. Store loosely covered in cool dry place for up to 2 months.

Cute and tasty!

Little sweet hearts for my sweethearts.

The little sprinkle of candy cane is enough to give a whole lot of taste.

I made little bowls out of gingerbread dough and filled them with meringues. Then I just wrapped the whole thing in clear wrap and gave it as a present. Everyone loved these!

Second snack recipe is for cinnamon almonds. They are crunchy and definitely a must for all the cinnamon lovers. I bet you can't just eat one. These and the meringues above are gluten free. Both are also fat free but not sugar free. These all have plenty of sugar (*giggle*). Anyway, for the Cinnamon almonds you will need:

-1 egg white
-1 tsp cold water (*or vanilla extract*)
-4 cups of whole almonds
-1/2 cup sugar (*or brown sugar*)
-1/4 tsp salt
-1/2 tsp ground cinnamon (*I used probably 3tsp*)

Preheat oven to 250 degrees F (120 degrees C). Lightly grease a 10x15 inch pan.

Lightly beat the egg white; add water, and beat until frothy but not stiff. Add the nuts, and stir until well coated. Mix the sugar, salt, and cinnamon, and sprinkle over the nuts. Toss to coat, and spread evenly on the prepared pan.

Bake for 1 hour in the preheated oven, stirring occasionally, until golden. Allow to cool, then store nuts in airtight containers.

Golden brown and ready to be enjoyed by all the happy friends and relatives.

Yummy cinnamon-sugar coated almonds.

Third snack recipe isn't much of a recipe but more like a tip. Dip store bought pretzels in melted chocolate and top with sprinkles. Refrigerate and then serve to all jolly Christmas folks at your home. Simple and tasty!

I used white chocolate and milk chocolate.

Close up.

The mix of salt and sweetness is really good!

I'm all done baking for Christmas this year and ready to just enjoy the sights, tastes and smells of the Holidays. I have few more Christmas pics left to share with you, so make sure to check them out over the Christmas day.
